In Between

I haven't posted a recipe in a loooong time.  I haven't because there has been nothing new going on here lately.  Instead, I've been using tried and true recipes to use up what's left in our freezers.  One is in major need of defrosting and I hope to combine the contents soon  AND soon there will (hopefully) be lots of strawberries to crush and freeze (and eat!).

That said, we could all use a little inspiration in the kitchen this in-between time of year.  So, pretty pretty pretty- please...will you tell me what you had for dinner last night?  I really want to know- even if it's mac and cheese from a box.  That will make me feel better on a whole other level:-).

Last night we had Chicken Chimichangas (from the freezer, made with turkey), Brunswick Stew (from the freezer, for the kids since the Chimichangas are a little spicy), sauteed asparagus (fresh!), applesauce (from the freezer), and lettuce (from the store because I am very, very weak).

  1. taco night! ground turkey with spices, shredded cheese, chopped tomatoes and avocado on tortillas fried in olive oil. not seasonal, but nothing is here in MA!

  2. We had salmon cakes, corn bread, and shells and cheese, because I didn't make it to the store yesterday. Today we will be having a "skillet" dinner from the freezer section of the grocery store because I will be helping my husband set out our garden and I really won't have time to cook a home cooked meal.

    Unlike you I don't know how to can foods (well other than tomatoes, LOL), and I don't have a freezer to store things in. Guess I need to learn.

  3. Spaghetti with meat sauce. Plums (that tasted more of chemicals than of plums). Leftover chocolate cake.

    Also, my freezer is nicely defrosted, but only because the power went out for 32 hours.

  4. I put a boneless turkey roast in the crockpot with some water and seasonings (garlic salt and Italian sesoning) and cooked it on low all day. About 15 minutes before mealtime I took the turkey out of the crockpot and dumped a bag of dry stuffing mix in. I replaced the cover and let it sit for a few minutes. We also had some salad with it.

  5. We had lettuce wraps with ground turkey. The lettuce in my garden is going crazy right now, and I'm trying to use it. I also took dinner to 2 other families, and it was a hit!

  6. Baked sweet potatoes, black beans, sauteed asparagus. Not inspirational, but tasty. No complaints around the table. :)

  7. We had a big salad using salad greens, fresh strawberries, Minneola oranges, pecans, sunflower seeds,green onion and small chunks of goat cheese. We topped it with balsamic vinegar. We love having cold meals after working out getting the garden ready and planted.

  9. Put a pork roast in the crock pot and cooked on low all day. Shredded it and added Head Country Bar-b-que (it's an Oklahoma thing) and ate on buns. Very yummy and so easy.

  10. Grilled pork chops that had been marinated in balsamic. Hash-brown casserole, made with homemade yogurt instead of sour cream, spinach (store-bought) salad w/ketchup vinaigrette, and mini pineapple upside-down cakes that my cooking class girls made.

  11. Okay, you asked for it. We had the homesteader's equivalent of mac n cheese from a box: Potatoes sliced into about 1/8" rounds and sauteed with garlic and onion in very light olive oil with a scrambled egg on the side. That's it. Working full time and homesteading with the extra work of covering plants in preparation for the snow that hit us last night left no energy for cooking; I'd have gone to bed with no supper if it weren't for Wayne! :-P

  12. I feel like we are in the inbetween time too not much has struck me as good or wonderful lately. I think I’m just biding my time until green grass and the smell of growth.

  13. We had boiled red potatoes topped with some leftover chili, cheese and sour cream with a side salad of cucumbers and tomatoes with fresh parsley and vinegarette. For dessert a smoothie/sorbet made from frozen banana, pineapple, vanilla yogurt and orange juice. :)

  16. Soup and toasted cheese sandwiches. Shopping day is tomorrow and I had absolutely NO creativity. But I'll cook my last "Thanksgiving" turkey for Sunday ~ I buy about 6 when they go on sale in November and keep 'em in the freezer.

  17. Pulled pork sandwiches and coleslaw...pork was cooked in the slow cooker and I made the coleslaw earlier in the day so it was a fast and easy meal for us last night!! It was yummy too! :)

  20. Sautéed some asparagus and spinach with garlic and olive oil and tossed some angel hair with it. Tonight: chicken-less chicken noodle soup with homemade frozen broth and homemade biscuits. Add some fruit and call it a meal!

  21. We had baby French lentils cooked with quinoa cooked in vegetable broth. Then I took lots of mushrooms and sauteed them with the chive heads and chives from the garden, fresh garlic, baby kale (the plants are winding down from last year), last some multi-grain tempeh and some no salt seasoning. I mixed the two together and it was so delicious and really quick to cook. A nice fresh greens mix with steamed chopped beets with a vinegrette and a bowl of fresh fruit. YUM! Kym

  22. We had meatloaf (this time with beef, but it can be made with turkey) from the freezer, asparagus sauteed with soy sauce and balsamic, and a little Caeser salad with bought croutons. Kind of a no fuss meal.

  23. This won't help but, the past few nights we had breakfast for dinner. The night before was hash browns, eggs, biscuits and gravy and last night was pancakes with blackberries inside raw almond butter and home made black berry jam on top. I have a parent in the hospital and with gardening things have been hectic and I haven't felt like cooking.

  24. My daughter cooked our dinner here last night. What a treat! It was her fabulous mac and cheese made with three kinds of cheese, a huge tossed salad and sauteed kale. Don't know exactly what she did with the kale but it was yummy . . . probably olive oil, garlic, and I know there were chopped nuts in there. No dessert but that was fine 'cause I ate way too much mac and cheese. And a monster helping of salad. And the sauteed kale. Gooooood!

  26. Last night, after working from 4am, I finally arrived home at 7:45pm, and made myself a tuna fish sandwich. hubby had been home for about an hour, the 2 teenage kids since 5pm, but NOONE had made anything to eat. Do you feel like you have to do ALL the work around the house too?

  27. I am having an incredibly hard time remembering, lol. We had bbq pork stir fry a few nights ago. We had chef salads Wednesday. Oh.... I tried making oven baked 'fried' chicken with a recipe that had good reviews, except mine didn't crisp up at all. But, they ate it. That and potato salad made with red potatoes. Finally (!) I remembered, lol. And strawberries. :)

  28. I'm also having trouble remembering! How can that be?? LOL No, I remember now -- roasted baby potatoes, roasted broccoli w/shredded parmesan and breadcrumbs, and sausages. Nothing spectacular, but as one of the other commenters mentioned, there were no complaints around the table! kristin

  31. we are having what I call taco bake
    I used canned chicken that we canned this year
    mixed it with refried beans and salsa and corn mixed all together (we canned the corn last year and the salsa also) put in pan then put
    shreddeed cheese on top then baked in oven till
    cheese melted and food is hot you can make it spicier by addind taco seasoning to the beans enjoy...

  32. We had a Papa Murphy's take-and-bake "$5 fave" pizza. Hubby will have the leftover for lunch. Dessert was chocolate-chip, coconut & almond cookies that I baked earlier this week.

  33. We had Ravoli casserole which is one of our new favorit meals!

    I make a meat sauce using canned spaghetti sauce, then in a big dish I layer cooked noodles (any shape, I usually use up leftover noodles if I have them.) Canned corn and green beans that have been seasoned with garlic and italian type herbs, some kind of cheese, cottage cheese or shredded and frozen ravioli's, I just keep layering willy nilly adding sauce to most of the layers until I get to the top of my pan or run out of ingredients. I've also made this with frozen mixed veggies, shredded chicken etc...whatever's on hand. Top it all with some sauce and a bit of shredded cheese, bake it until it's hot and the cheese is melted, and we ate it with some homemade garlic bread croutons..(because I forgot the bread in the oven and it was too toasted to eat like garlic bread....)

    This meal is delicious, my husband loves it!

Roasted sweet potatoes drizzled in honey and butter, bacon braised green beans (from the freezer), skillet fried corn (from the freezer), homemade biscuits with apple butter (canned), and pickled beets (canned). While I love the fresh produce I put up over the summer, I am like you in that I am coming to the point where I am ready for fresh from the garden produce and fresh fruits (strawberries, please hurry!).

  38. Tonight we made green smoothies then had the True Foods Kale salad. Recipe is online if you google that. Yesterday we had ice cream for dinner because we ate such a big lunch at Fajitas for Cinco de Mayo that we were too full for real food, but not too full for dessert! Hence the kale salad for dinner tonight.

  39. It's finally nice enough to BBQ, but I was short of time. So we had hot dogs (gross, I know), with a delish macaroni salad on the side. Macaroni, raw carrots and celery, cubed cheese, mayo, salt and pepper, and then the ultimate ingredient: hickory sticks! It is our favorite BBQ/picnic side! Original recipe calls for chicken instead of cheese
