Cool Treats

We are feeling the heat, are you?

Here are a few cool treats that might help you survive the hot temps.  Sorry I didn't get this up prior to the holiday.  You'll just have think of another excuse to make them.  Like, because it's July?  That's good enough for me.

Ice Cream Sandwich Cake.  It's my most viewed page and has been pinned on Pinterest over 225,000 times.  With all the healthy, made from scratch recipes I have on here, I think it's mighty ironic that this is the most popular one!  The reason is because it's super easy and delicious and you can change up the ingredients to make it your own.  In the heat of summer, who wants to turn on the oven anyway?  Just make sure you eat a healthy supper first:-).

 I made this one with bananas, crushed oreos and strawberry sundae topping.

Another favorite cool recipe of ours is creatively named Frozen Dessert.  It's also far from made-from-scratch although it's healthier. You may know of a similar version.  It's a one bowl, super easy treat.



Frozen Dessert (recipe from my mom)

1 (14 oz.) can whole cranberry sauce
1 (20 oz.) can crushed pineapple
1/2 cup sugar
1-2 bananas, chopped into small, bite-sized pieces
16 oz. cool whip

Mix all ingredients well in a large bowl.  Spread into a 9 x 13 inch pan, cover and freeze for several hours or overnight.  When ready to serve, cut the dessert with a sharp knife (like a cake).


Strawberry Yogurt Popsicles are a cinch to make, contain no sugar and are very refreshing.  Use frozen strawberries that are already chilling in your freezer, or use fresh if you can still get them.
