Sweet Potato, Caramelized Onion & Feta Pizza

This recipe turned out to be incredibly lovely.  Just by reading it through the first time, I was impressed despite the fact that it called for potatoes.  Fortunately for me, the few regular potatoes we had left were too soft, so I substituted sweet potatoes.  I'd heard of sweet potato on pizza before and had just the other week made Potato Lasagna which calls for sweet potatoes and tomatoes, a combination I was unsure of initially but which works very well.

I ended up altering the recipe even further.  Instead of using tomato puree as a bed for the veggies and cheese, I pulsed some of our roasted tomatoes in my mini chopper.  The tang from the tomatoes is balanced out by the sweet potatoes and caramelized onions.  And the feta?  Well, feta just makes everything better.

The end result turned out really delicious.  Delicious enough to tell you about it.  Unlike the Chicken and Green Bean Mole I made last week.  That was a disappointment.

Sweet Potato, Caramelized Onion and Feta Pizza (adapted heavily from Cooking Light Annual Recipes 2001I know I've probably just about brainwashed you on how wonderful roasted tomatoes are, but I really mean it and everyone needs to make them this summer/fall.  I'll remind you when the time comes.  I promise.  Until then, click on the link below if you haven't been sufficiently brainwashed.  Yet.

2-3 cups thinly sliced (and peeled) sweet potatoes
3 cups thinly sliced onions
1 tbsp. olive oil
1 tsp. dried thyme
1/4 tsp. ground black pepper
1/2 tsp. salt
2 cups roasted tomatoes
1 1/2 cups feta cheese
pizza dough to cover a 17 x 13 inch baking sheet

Place sliced sweet potatoes in a large bowl and toss them with 1 tbsp. olive oil, thyme, pepper and salt.


Spread them on a greased baking sheet and bake at 425 degrees for 10 minutes or until they soften, checking frequently to avoid burning them.

In the meantime, saute onions in 1 tbsp. oil over medium high heat for about 5 minutes.  Turn heat down to medium and saute for another 15 minutes.


While the onions are sauteing, place the roasted tomatoes in a food processor and chop well, making a chunky paste.


Spread pizza dough out on a greased baking sheet.  Spread roasted tomato paste on the dough (as you would pizza sauce).  Next, lay roasted sweet potato slices on top.

 

Is your mouth watering yet?  Distribute caramelized onions on top of the sweet potatoes.


Top with feta cheese.


Bake at 400 degrees for 10-15 minutes or until crust is slightly browned.


Lastly, and most importantly... Dig.  In.  That's an order. Pin It

  1. OMG. It is so dangerous reading your blog over here in Korea where I can't make any of this deliciousness! Bloody Koreans and their dislike of ovens, and feta cheese. This looks simply to DIE FOR.

  3. Friday night is family pizza night in our house. I make the dough and my husband makes calzones for the kids and pizza for us. Our favorite is carmelized onions, feta and artichokes..sometimes we'll add chopped olives. I think I need to try yours with the sweet potatoes! It looks delish! Have you written any posts about composting? I'm interested in starting one but am nervous about the critters, big and small, that we may attract!! Love your garden tutorials as well..thank you.

    We don't officially "compost" here. Kitchen scraps go directly to our chickens (who later deposit it directly into our gardens) and leaves and grass clippings go directly on the garden as mulch.

  6. Ohhhh! So yummy looking! I made a similar pizza with red potatoes and leeks, but I LOVE sweet potatoes. Did you add anything to your tomatoes? My version didn't have tomatoes but I added some I had dehydrated. Must try this one soon!

    I'm still searching for the perfect Whole wheat crust recipe though.

  7. Amy, I roast my tomatoes with a drizzle of olive oil/garlic/basil/salt/black pepper mix on them, so they are already flavored. The link above takes you to my friends' page which shows how.

  8. I couldn't agree more roasted tomatoes are my absolute favorite way to preserve the flavor of summer. I roast a batch and turn them into sauce for pasta, hands down the best sauce on the planet. Thanks for sharing this yummy recipe I can't wait to try it. Robin
