Oh man, I really should have sampled these at the Christmas program! I saw them and almost took one, then I got distracted by something else and forgot about them. If I'd known they were minty, whew, boy, they would have been on my plate for sure! Maybe I'll just have to make them myself!

This sounds a lot like a recipe my mom makes, except she uses creme de menthe instead of mint extract. She has only ever made them to take to our family reunion because they are so, so rich! My husband has talked her into making them for Christmas this year too for the first time ever, though I think she plans on giving about half of them away as gifts! Probably best for all of us...
