Ice Cream Sandwich Cake

This might be our family's most requested birthday cake from now on. The recipe comes from a friend from church, Wendy. She is very popular at our house right now:-).

I first tasted this cake at Wendy's house during a Youth Council meeting. I could not figure out how they made it and was in awe of the flavor that seemed to take me back to my childhood. The layering impressed the dickens out of me and while I knew I was going to ask for the recipe, I was afraid it would look too involved.

I was wrong. This cake can be put together in 10 minutes flat. It calls for very few ingredients and it was a hit with everyone who ate of it. Please find some excuse to make this. Is there a birthday coming up? An anniversary? All I can say is that you better think of something.

 Banana Split Version (sliced bananas, strawberry sundae topping and crushed Oreos)

Ice Cream Sandwich Cake (recipe from Wendy G.)
In the pictures (and directions below) you can see I lined my pan with foil.  I've made this many times since without lining the pan and then just serve it out of the pan.  Lifting the pieces individually out of the pan gets just as many oohs and ahhs:-). 

Also, feel free to use different flavored sundae toppings and different candies.  You can also add fruit.  Below is our favorite combination.

24 ice cream sandwiches
16 ounces of cool whip
1 jar caramel sundae topping
1 bag of your favorite candy, coarsely chopped Reeses peanut butter cups

Yep, that's it.

Lay half of the ice cream sandwiches (whole) in the bottom of a 9 x 13-inch pan, trimming the last couple to get complete coverage. Top with half of the cool whip, half of the caramel sundae topping and half of the candy. Lay down another layer of ice cream sandwiches.  Top with remaining cool whip and spread out evenly with a knife, making a lip around the edge so the sundae topping won't run out and over the edges.  Top with remaining candy, cover and freeze for several hours (or overnight) before serving.

That's it.


Depending on how cold your freezer is, you may need to thaw it on the counter for 10-15 minutes before serving.





Now, I guess I could have made some homemade ice cream from local milk, baked my own chocolate wafers, whipped up some real whipped cream, made my own caramel sauce and candy.

But, oh, I would have missed the taste of those store-bought ice cream sandwiches I remember growing up. That, and, I would have pretty much gone insane. This pregnancy has lead to some short-cuts and eating this cake has made the idea of short-cuts much easier to deal with.

    1. You would substitute Bird's Dream topping or long-life whipped UHT cream for the Cool Whip. Ice cream sandwiches... hmmm... if they have a common name in the UK I don't know it. They are just vanilla ice cream bars but instead of being coated with chocolate candy they have chocolate biscuits on the sides.

    5. I would use choc ices with a layer of your favorite biscuit on either side, I think that would work well. Make sure the biscuits aren't too hard though. Also for the cool whip, so they still sell superwhip? I'm English but live in the US and had superwhip which is exactly the same as cool whip. Hope this helps, let us know how it goes. Oh I bt it would taste so good with Malteesers.

    1. It was so long ago that I made it using the foil (now, I just make it directly in the pan and serve it out of there), but I am almost certain I did not spray it. You don't want that oil tainting your ice cream and since it's not baked, it's not going to bake onto the foil causing intense stickiness. Enjoy!

    2. I have made this before without the sundae topping and Reeses. I used butterscotch pudding (the powder out of the box) mixed into the cool whip, can't tell its cool whip! Then I topped with crunched up Heath bar. You can probably use your favorite pudding flavor with the candy topping of your choice.

    3. you can also cut it down to 12 sandwiches...and use 1 jar of choc fudge ice cream topping mixed with 1 instant choc pudding. it's a fudgy middle...... put 4 ice cream sandwiches down on plate, use half of the fudge mixture, put 4 more sandwiches down, use up all fudge mixture, top with last 4 ice cream sandwiches. Then use coolwhip to seall all sides and top and freeze. if you don't want cool whip, just make more fudge topping and sprinkle some sort of candy or cookie on top instead of cool whip.

    5. Yesterday was scorching hot in Montreal so I did this recipe for my father's birthday cake! But since my parents don't like any type of «fake» whipped cream,we made it with real 35% cream that we whipped prior to assembling, replaced the caramel by home made strawberry coulis made fresh and replaced the candy by fresh sliced strawberries! It worked out perfectly... It was a HUGE success!!! Everybody loved it and it was a really nice and refreshing dessert! Thanks-a-million :)

  14. Been making this for YEARS!!! Always a crowd pleaser. I only do one layer, though. Fills up the 9x13 pan and is plenty rich. I have used Heath bars, Butterfingers, Reeses, all kinds of candy. Our favorite is Heath. Getting to crush the candy is a weird sort of therapy, an added bonus!!!

    1. I usually make it the night before, but I would guess several hours will firm it up nicely- remember the ice cream sandwiches are already (mostly) frozen when you set the cake in the freezer. Enjoy!

  28. I've made this many times....taste better each time ! I've used mint chips,whip cream,walnuts......cherry pie filling w/nuts and whip cream....chocolate chunks,peanuts,whip cream,chocolate hard shell. What ever your imagination will take you...SO GOOD!!!!!!!!

    1. It actually turns into the same "hardness" as the vanilla ice cream in the sandwiches. If your freezer freezes things rock hard, you will want to set it out for awhile to soften it, but most freezers that keep ice cream sandwiches the right "hardness" will keep the cake perfectly. All this to say, no, the cool whip doesn't get too hard:-).

I always make an ice cream cake and asked if she would like to try this - However her candy choice was KitKat and I used Caramel and Hershey's special Dark Hot fudge topping i found to drizzle in between the layers cannot wait to try it tomorrow!     1. Use a 9 x 13-inch pan and, yes, cover it prior to freezing. When I make it in my pan, it's a bit higher than the pan, but my lid allows for some height so it's no problem. If you don't have a lid like this, you may want to freeze it uncovered for a half hour to let the cool whip firm up and then cover it with plastic wrap or foil:-).

    1. The pan I use is a pretty standard 9 x 13 inch pan, but the filling does rise above the pan. My lid allows for some space, but you could always freeze it for an hour or two uncovered, then use foil to cover it if you don't have a lid with some height:-).

    No, you cannot put whip cream on it and put in freezer....it will not freeze....trust me...I made a peanut butter pie and thought I'd try a piece first by freezing it with whip cream on it and drizzled some chocolate syrup over the whip cream and it all ran together....still eatable, but I would suggest if you use whip cream to put it on just before you start to eat it.....not put it on the pie and stick in the freezer.....the whip cream will not freeze....

  46. My husbands LOVES ice cream cakes and doesn't really care for actual traditional birthday cakes. But ice cream cakes are ridiculously expensive! Like 20 to 30 bucks for a simple one!   51. I just made this. Here's a tip - make sure you have everything ready to go. Sandwiches unwrapped, candy unwrapped and chopped, caramel jar open. Once you get started, you have to keep moving. I didnt and the jar was hard to get open w/o help, I had to unwrap everything while making this, chop the candy. Needless to say, it got a little messy. Next time, I will unwrap all sandwiches and put em on a plate in the freezer until ready to be used.

    1. Thanks for the suggestion. I agree that having the candy chopped and ready is a must and having other ingredients ready is helpful. I unwrap the sandwiches as I go and with everything else ready, there is ample time to get it put together before the ice cream starts running:-).

  57. If you can get the ice cream sandwiches then make your own ice cream sandwich using Graham cracker and put Ice cream on those. And there's your ice cream sandwich.. I like the cinnamon kind of Graham crackers, which my child loves... if you try it let me know what you think.

    2. since there are 24 ice cream sandwiches in the recipe, wouldn't 12 servings mean each person would get the equivalent of two ice cream sandwiches? Seems like a huge serving including the other ingredients.

    1. I wish I had a bag around the house to check- I just use one standard size bag of the individually-wrapped mini Reese's Peanut Butter Cups for one whole cake. I unwrap them, chop them into quarters and use half in the middle layer and the other half on top. The candy amount is pretty flexible, though, depending on how sweet you want your cake:-).

  68. Good but I still love homemade cakes. I really would not call this a cake more like an ice cream pie I make a good one but i use graham crackers, whip cream,oreo ice cream, vanilla pudding and crushed oreo cookies to top. layer the same way feel free to try it.

  72. I got this recipe from friend. Instead of caramel I use chocolate sauce and crushed sweet drumstick ice cream cones for middle and topping.I also found neopolitan ice cream sandwiches to use. REAL good!!

  73. This was a hit with my kids! We used hot fudge instead of the caramel. Just heat up the hot fudge for about 25-30 seconds in the microwave before pouring it on.
    WONDERFUL!! Thinking of all the different options for the middle candy layer . . . Oh, the choices are endless. Great recipe! Thanks for sharing.

I am thinking crushed up cookies and chocolate coating that hardens (like the kind of chocolate on dipped cones from dairy queen).   77. I made this tonight for my husbands birthday. I too saw it on Pinterest and when I saw the ice cream sandwiches I knew this would be the best cake for him. He loves them! I halfed it since we're just a family of 2 adults and 2 little kids and used a 9x9 pan and 12 ice creams but still used almost 16oz of cool whip. on my middle and top. I also used both chocolate and caramel syrup with the Heath candies bits in the baking isle by the choc chips. I can't wait for tomorrow when we eat it! Looks so good. Thank you!

    PS- I will add I am definitely going to add a little bit of cream cheese to the cool whip mixture for my birthday in a couple months to give it a creamier flavor and add Special Dark candies and syrup as those are my favorite. :-P Yummm!

  85. I hate to be a downer, but you are feeding poison to your family. Anyone who can tolerate that much sugar in one serving of food has been eating a more than healthy amount of it on a daily basis. I understand you have good intentions, but you may as well be teaching your kids to smoke or do drugs. Sugar is not food-it has no nutritional value and is in fact a hazard to your health. Are you not aware of the recently published studies that show sugar as a leading cause of cardiovascular disease and numerous other serious diseases? Bring your family up on fresh produce and keep that poison out of your house - the longer they go without it the less they will like it. The companies that produce junk food like this and then sell you drugs after you get sick from it are stealing your good health and well being from you. Dont let them do it. Learn to prepare and love real food.

    1. I appreciate your concern. Our family does not eat like this on a regular basis- in fact we grow much of our food organically, eating it fresh and preserving it to eat throughout the year. We do not eat this type of food on a daily (or weekly) basis. This is a special occasion dessert that we make a couple times a year.

  86. I made this for my son's birthday and it was a huge hit! I think next time I'll splurge on a higher quality ice cream sandwich bar- the store brand (in February) tasted a bit freezer burned which was slightly disappointing. Especially since the cake was so yummy!!!
